Text in dvd menu... Ive checked the other post before writing this, but still cant find it

Hey Guys,

OK... I know that in the template I cant change or edit the text. I know I have to do it somewhere else. The problem is that I have no idea where to do it... Can anybody help me with a few step by steps. Ive been looking the right place for over 2 hours...
