Is it possible to set a specific maximum size, let's say 500MB max, when producing the video as mp4 ?

No, you'd have to calculate the avg bitrate to set in a custom profile based on the duration of your video to achieve a given end file size. You can see estimated file size in the "Produce" tab "Output folder:" region of the GUI interface.
