I'm using the custom Zoom & Pan with my own keyframes.
Is there an option to easein / ease out the zoom with these key frames ?

No. The Crop/Zoom/Pan power tool is designed to make quick edits with a continuity of motion, but it automates all the other parts. The only way to have full control is to use keyframes in the PiP Designer.
