I want to create Blu-Ray discs from video captured from a Sony HD camera at the highest quality possible. What formats should I use to produce the video (render) from the .m2ts clips and what format should I burn them to the disc.

AVCHD is the best option for Blu-Ray.

Agreed. I always use AVCHD format and am very impressed with the resulting Blu-ray disk
