After a couple of years of trial an error with in camera mics with wind cutting coverings etc my solution is.

A separate good quality voice recorder (I use an OLYMPUS DS30 voice recorder) strapped to my shoulder strap with the detachable stereo mic in my helmet covered in wind cheating foam.

With this set up I can get clear voice recordings up to 50 MPH. You may be able to get better results with a motorcycle helmet as mine has air holes everywhere and much more open than a close fitting motorcycle helmet.
