Can I control or change the default screenshot/thumbnail pic of my videos after I produce them?

Can someone help me figure out how to alter the default screenshot/thumbnail pic when saving a video? I save videos, then produce them and wind up with a random shot of the video as the default thumbnail pic, which looks awkard. Can I change this? Or control it in some way? Thanks!
