Highest quality video- HELP!

It says I have to create a profile in order to get the best quality for my videos (ie so they dont look like they have been recorded on a hand held camera, but more professional) and I dont know how/ what to do. A step by step would be really helpful.

OK I HAVE NOW WORKED OUT HOW TO CREATE A PROFILE - WHAT ARE THE BEST SETTINGS TO ACHEIVE THE BEST VIDEO QUALITY (mpeg2 format) thanks

I would be saving the video as .avi files not mpeg - I think this is the best quality, but it creates large files.
