Short answer, in the Menu Designer.

To modify a downloaded template you right click and see if there is a Modify item in the right click menu.
If there is not a Modify Item, you can not edit that menu.

Menu Designer is found in the Create Disk module on the Menu Preferences tab. There is Create from scratch or right click an existing menu and Modify.

Explore the icons at the top of the Menu Designer, the Add buttons is the fourth or last button at top.
Hover your mouse pointer will give you a tool tip, that describes the button.

Thanks for the response Carl. I am trying to find more detail at adding "buttons per page." In the Create Disk area in the window with all the menus, look in the lower right area and you will see the box I am referring too. This is where, if it is editable, will allow you to change how many chapters appear in each section of the menu structure.
I have changed this before on a simple menu I created a long time ago, but forgot where I did it at, and can't seem to find it now.
